    I love this word. “The act or process of merging,” it’s not a word I hear often but heard it earlier today and it really should be used more often.

    Small particles of browned food and especially meat that adhere to the bottom of a cooking pan and are used especially in making sauces

    After searing the steak, we noted the amount of fond (the residue of browned meat that sticks to the pan), which can be deglazed for a rich, flavorful pan sauce.

    Apparently non stick pans do not make much Fond unless heat is increased to a level to damage the non stick surface and make it easy to burn the food

    I did that yesterday (not something I make a habit of)

    It was lamb's liver ,kidney ,bacon and sage that I fried up in the pan.


    Then ,because I had an old opened bottle of red wine I threw into the pan after taking out the liver etc and made a little sauce to experiment .

    It worked quite well although quantity was small.

    I have another "regular" recipe with chicken pieces ,cardamom,green peppers and sweet red martini.

    Add cream and marmite to that sauce.
