Is there any sort of maximum level of power/control that a Jedi/Sith might have over the force? Like can they get powerful enough to shake planets to their core and make stars go nova at a whim? Fart the trek galaxy out of existence, as mars13 would put it? Or is the human/alien body too fragile to withold that kind of power?
I do not think that the Jedi/Sith have control over the force but are able to use parts of "the living force". Yoda also speaks of becoming one with the force. That is "a power greater than all". There is also some discussion of eternal life as the ultimate goal of the Sith. So I do not think a living person could harness enough force to effect a planet.
A group of people, perhaps? And I know it as the living force being the college of the use of the force materially, as with lightning or telekinesis. I was thinking, the force has an inherent bond in all living things (except the Yuuzhan Vong[that I know of, I'm only on book 6 of that series]), but it exists outside of all those living things, it surrounds us and carries us and binds the galaxy together. So, perhaps someone can harness the force to such a degree, based on the connected between an individual and a planet, and the strength of the two connections in comparison.
Well in the one of the books a dozen half trained jedi shoved an entire fleet of Star Destroyers half a light year out of system at the cost of one mans life. So planet shattering my be in reach for peopl like Yoda, Anakin Skywalker, Kyp Duron, and Anakin Solo. It is definately in reach for Luke as from reports i heard he fliped around a blackhole, but that made him pass out.

Well the book was during the Admiral Daala crisis, which was admittedly after Admiral Thrawn. As I remember it Skywalker was off on mission for most of the battle. Still the Jedi Academy was holding off vastly superior numbers on the gorund and they were only have trained. Then the one from the cloning civilization led a sort of Force ritual which shoved a dozen ISD and 20 VSD completely out of system and causing extreme damage. As for Luke and the Blackhole he was reportedly saying after words he could have done it without passing out but to that he would have had to do it more directly which would open him to the darkside. Now this is a second hand report, but from what we know of Luke's abilities this is not too far fetched. We are talking a man who went from Padawan to full fledge Knight in little more than three years and was a Master five years later. A man who survived a full on assault by Vader in Bespin. If you read Shadows of the Empire you find out that Darth Vader was trying his best to kill Luke and failing.
There are some SW book sources that mention Sith chroniclers which can destroy an entire system at will...they just don't want to get involved with shit. I'm sure that, given time, any sith or jedi would be powerful enough to "fart the trek galaxy out of existence". However, I would not like to get in the way of one that could, or even worse, would, posses and use such awesome power.

Yoda hid on Dagobah next to the hollow tree he had previously dispatched an extremely Dark Jedi in order to put Sidious off of his scent. The Dark power obscured his lighter powers. This could hint that Sidious could detect other strong force-sensitive entities from a great distance.
He had the power to hide his extremely strong scent of the dark side from every jedi in the order, from right under their noses, this wouldn't be all that surprising...
