Because they auction off frequency ranges to different cellphone carriers. (Everyone can't use the same frequencies.) 5G sub-6GHz uses the standard (LTE) bands. These include 600-960MHz and 1700-2400MHz. They often also use the ISM bands, specifically the 2.4GHz band (although these cannot be 'reserved' for the phone.) These also include the 802.11 (wifi) and Bluetooth frequencies. 5G NR also uses millimeter wave bands. These are currently 24-28 and 39-40GHz.
