I think her most recent Trek appearance was in the Voyager episode "Flashback," circa 1996. I think that's where your second image comes from (you can see her in the background of the picture on that link).

Grace Lee Whitney would have been at least 65 when "Flashback" was filmed! She looked amazing for a woman that age.
