For The Fish, it's the big three:

Bach
  • Brandenburg Concertos
  • Concerto for 2 Violins in D minor, BWV 1043
  • Toccata and Fugue in D minor, BWV 565
Handel
  • Water Music & Music For the Royal Fireworks
  • Messiah
  • Concerto Grossi
Vivaldi
  • Four Seasons
  • Gloria in D Major
  • Lute/Mandolin/Guitar Concerti
I would also toss in Albinoni's Adagio - possibly the most depressing piece of music ever, but brilliant.
